Summer Dipping | Jalepeno Corn Dip

Grilled corn!

Loyal Listener Leanne sent me a very simple but really yummy-looking dip that is sure to be a big hit at your next potluck barbecue. I happen to have a taste for spicy stuff so this one is right up my alley.

This time of year I have plenty of corn in the garden, so I'll be sure grill up extra for this dip. If you're not a gardener, pick up an extra ear or two at your produce stand so you can make this also!

 Leftover corn on the cob? Make jalapeño corn dip!

3 c. corn kernels
½ c. mayonnaise
½ c. sour cream
chopped jalapeños to desired spiciness ~1/3 to 1/2c (we use nacho slices)
1 c. shredded Colby Jack blend (you can always add more cheese!)
1 tsp. cumin (or taco seasoning)
pinch of salt and pepper.

Mix it up, dollop with extra sour cream and plenty of fresh cilantro. Serve with tortilla chips or Fritos or whatever you like. So delish, it disappears quickly! Grilled corn yields the yummiest results too! Leanne
