Tim McGraw’s latest single is titled “Humble and Kind” and with over 40 million views as of today, I believe he struck a chord with a good many people! I know he did with me!

The hit single was inspired by Tim and Faith's daughter who was leaving for college; in true Time McGraw fashion he is speaking from his heart, and beautifully so.

Many of you will also have children graduating from high school in the coming months. But whether they are moving out, moving on, or just moving about their childhood, this is an inspiring song for all of us who wish the very same thing for the children we love.

I am so excited to share this labor of love with you.  We've been hard at work for the past six months and it almost feels like I should be heading to the hospital with a new car seat... so much effort and anticipation and waiting has gone into this endeavor, it's akin to giving birth.

On my new site you'll find everything you could possibly want to know about the Delilah show like where to listen, my book club picks, contests and promotions, what's happening on and off the air, at the farm, and when and where I'm out and about.

We have some new and exciting features in production, like the ability to download audio clips of  your dedications and dilemmas, and a live goat cam coming soon! Take your time to look around and get familiar with navigation.  Make sure you check out the feature buttons in the What's Happening section.

I'll share my thoughts, my joys, my struggles, and my gratitude with you here, just as I do on the air each evening. If something isn't working just right, please be patient. There will probably be a few bugs to work out initially.

Be an Instrument of Peace

You know what they say about people who spread rumors...whoever gossips to you will gossip about you. Beware of hanging around someone who is divisive and gossipy. That kind of person is only happy when they're making others unhappy.

I have a friend who invited her crazy sister to come live with her, and now her world is upside down. The sister is turning daughter against mother, the kids are fighting, and there is turmoil in the house where there wasn't before. Sis is making a big mess and causing a lot of strife in the household. 

There is enough craziness in the outside world, and home should be your one place of peace. It should be your place of comfort. Now, my home isn't always "peaceful" per se with a bunch of kids, cats, and dogs running throughout, but it is a safe place. Anyone who threatens that safety will be shown the door.  Anyone who stirs up trouble will be set straight.

You can't always control the crazy around you, but you can try to be an instrument of peace wherever you go. You can choose whether you will let the crazy, the negativity invade your space, or you can choose to ignore it and lead by example in the way you treat people. 

Check your attitude today. How have your conversations gone lately? Are you feeding into toxic negativity, or are you trying to be the peacemaker? I hope you're that 'safe friend' people can feel comfortable around because it's a much healthier way to be. 

And I promise each night I will try to bring a note of serenity into your evenings so you can brush off the negativity of the day. I will try to take you to a place in your heart that feels like all the safe comforts of home...

 

 

Delilah, the 'Queen of Sappy Love Songs,' is coming to Siouxland

“Delilah has shared all of her stuff on the radio and shares her heartbreak and shares her love of life,” he said. “I think other people say, ‘Wow, if she’s that open and vulnerable, I will be too.’”

It also helps that callers remain largely anonymous like readers who write to Dear Abby.

Delilah developed the format for her radio show in September 1984 when her firstborn son was 16 days old. It was an uphill battle to get the program directors to back her sappy, heart-to-heart talk show, but she believed in the vision and fought for it.

“When you get hundreds of calls a night, people tell you that what you’re doing matters and it’s inspired them, it doesn’t really matter what somebody else’s research shows or opinion says,” she said. “I trust my listeners.”

Of the estimated 62,000 calls she receives over 12 hours each night, she takes about 50-60 of them and only 25 callers get on air.

She hears from all kinds of people from the bubbly to the heartbroken. With some, she becomes their instant best friend and confidant.

“We live in a world where we have all these technologies and all these abilities to connect and communicate with cell phones and iPads and iPhones and faxing and texting and WhatsApp and Facebook,” she said. “Yet, people are lonelier than ever before.”

She’s felt the pangs of loneliness and has relentlessly sought love and given love, even though the act of doing so opened her up to excruciating pain when she lost her adopted 16-year-old son, Sammy, to sickle cell anemia four years ago.

Delilah adopted many of her children when she was single, and many of them have health issues.

“Every day is a challenge,” she said. But it’s apparent she still feels blessed for each new day the sun rises over her 55-acre farm outside of Seattle.

On this particular morning, she got up early and served her children a frittata with homemade goat cheese before they went off to school. They eat a lot of eggs for breakfast – scrambled, boiled, fried – since 600 chickens live on the farm.

She went down to her basement studio for an early-morning interview and got started on the day’s pre-recordings. She walked her dogs, checked on the pregnant goats and pulled some meat out of the freezer for dinner – all before noon.

Delilah says she doesn’t have down days. She has days where she’s annoyed or her heart is breaking, but even then, she’s pretty obnoxiously optimistic.

“Armistice Day,” established to commemorate the end of World War I, by signing of the armistice on the 11th day, of the 11th month, at the 11th hour, evolved into our current Veteran’s Day.  Our country has set aside this date, November 11, to honor American veterans of all wars.  And we should.

Our service men and women make huge sacrifices to protect our freedoms. Whether you agree or disagree with the missions they are sent upon, you must respect, honor and appreciate their willingness to put their lives on the line for all American citizens.

It breaks my heart to see veterans that are not being shown the proper respect, compassion, and admiration they so richly deserve. I think we can do better.

My life was changed forever when I went on an USO tour with the Air Force Reserve Band to Iraq and Afghanistan in 2006.  On one stop of the tour I met several wonderful service men who were being entertained and having a great time during a brief respite. On a subsequent stop, days later, I met many of the same group, grievously injured, some missing limbs, as they arrived at a military hospital.  

They were so brave! I could never begin to express the profound mixture of sadness, heartache, and pride I felt greeting each one as they came through a set of double doors.  One soldier, missing his legs, saw me and sat up, calling for my autograph to give to his mother, a fan. Can you imagine? I spent more time with this remarkable young man, praying with him and calling his mom on his behalf.  We have remained in-touch since.

Sloppy Joe's Tater Tot Casserole

Ingredients: 

1 lb. ground beef, browned and drained

Salt and pepper (to taste)

1 green bell pepper, diced

1 medium yellow onion, diced

1 cup Pico de Gallo (fresh salsa)

1 can sloppy joe seasoning sauce 

Shredded cheddar cheese (to taste)

1 bag frozen tater tots 

 

Preparation: 

Preheat oven to 375. 

Spread tots onto a cookie sheet and bake until almost done. Remove from oven and set aside.  

In a heavy pan on the stove, brown the hamburger until cooked through; add onion, bell pepper, salt, pepper and simmer on low until vegetables are softened. Add sloppy joe sauce and Pico de Gallo, stir until well combined. Pour cooked meat mixture into a 9 x 13 glass baking dish and sprinkle shredded cheese on top. Arrange tots on top of the meat and cheese mixture until the entire surface is covered. Sprinkle more cheese on top of the tots and put back in the oven to finish baking. The deliciousness is ready when the tots are crispy and the meat is hot and bubbling. Enjoy!

 

Easy, Cheesy One-Pan Pasta

Ingredients:

1 pound of uncooked penne or ziti pasta 

1 jar of your favorite spaghetti or red sauce

1 jar of water (equal amounts of sauce to water)

2 cups of shredded Mozzarella cheese, reserve 1 cup 

1 bunch of green onions, chopped into small pieces

1 clove garlic, peeled and minced

Cooked meatballs (optional)

Salt and pepper to taste

 

Instructions:

In a greased 13X9 pan add all ingredients and mix together. 

Cover tightly then put in the oven at 425 degrees for 1/2 hour.  

Uncover and stir pasta, top with remaining cheese and continue to bake for 10 minutes or until pasta is cooked through.

Black Bean Sweet Potato Tacos

1 lb. ground beef or turkey

1 packet taco seasoning 

2-3 sweet potatoes 

1 can black beans 

1 small onion, caramelized

Salsa

Shredded cheese

Shredded cabbage or iceberg lettuce 

Nonfat plain yogurt or sour cream 

Flour tortillas

Cumin and cayenne seasonings, to taste

 

Instructions:

Brown meat, drain, and simmer in taco seasoning for 20 minutes.

Peel and dice sweet potatoes, boil for about 20 minutes.

Drain sweet potatoes and stir in black beans, cumin and cayenne together in the pot. Stir till heated through. 

On tortilla, layer the sweet potato/black bean mixture on top of the ground meat, or go meatless, and add other toppings as desired.

 

 

Polenta Taco Bake

Ingredients:

1 lb ground beef

1 roll of polenta

Mexican shredded cheese

Taco seasoning

Onions, chopped

Toppings: Taco toppings like shredded lettuce, guacamole or avocado, olives, tomatoes, sour cream

 

Instructions:

Brown the ground beef and drain. Add a half cup of water, seasoning, onions (or pico de gallo), and simmer till well-seasoned.

While browning, spray a baking dish. Slice polenta and layer in baking dish. Sprinkle thin layer of cheese over top. 

Layer seasoned beef over top of polenta, then smother it in more cheese. 

Bake at 350 for 20-30 minutes, uncovered. 

Remove from oven and add taco toppings.

 

 

A Voice for Forgotten Children

In 1993, the original Point Hope was started as she met a homeless mother who was living on the streets with her kids and sleeping in cardboard boxes. Delilah started a street mission to distribute food, clothes and blankets to homeless people in Philadelphia, where she was still living. Delilaha’s main goal was to distribute information to people so they could make better choices for themselves and their children. Most of the homeless population lived on the streets due to alcoholism, drug addiction or mental illness, as is still the case. Delilah’s friends and she would make tuna fish sandwiches and go downtown every Wednesday , hand out the sandwiches, as well as clothes they had collected, and distribute pamphlets with Alcoholic Anonymous (AA) and Narcotics Anonymous (NA) meeting schedules, as well as shelter locations for women and children.

When Delilah moved to Seattle in 1997, Point Hope went on hiatus as she focused on her own growing family. Delilah went from being a mother of two to a mother of seven in a short time span. Four of her children were adopted out of the foster care system, and she learned what a horribly abusive system it is. She advocated for change and spoke out against the status quo.

INCORPORATED IN 2004, FOCUSED IN WEST AFRICA

Then in 2004, something happened that further changed Delilah’s world. A single woman in West Africa wrote an email to Delilah from an internet cafe’ located in a building most of us would consider a shack. Delilah read the appeal from the woman. She was asking for help caring for her two starving children living in a town called Buduburam where there was a Liberian refugee camp in the country of Ghana.

Delilah felt God telling her she had to check out this story. She quickly learned the truth of what the woman told her. The United Nations had sponsored a refugee camp of Liberians since the first civil war of 1990. Initially over 80,000 people had come to the camp which was equipped for a population of 4,000; when Delilah stepped into that camp in May 2004, mere weeks after receiving that first email, she found more than 60,000 people living there. Instead of two little children needing help, there were more than 10,000. She also discovered there was no fresh, running water. Instead, children were being sent down inside sewage ditches to make a small pile of rocks and pebbles to filter the water, collect it and hand it up to the adults waiting in the line to collect it. Or, for those people who were able to afford the expense, water trucks would drive into camp delivering dirty water dredged from a nearby lake for a price. Water borne diseases were rampant and there were children dying daily. Point Hope was reborn in the U.S. and also assisted in establishing PointHope Ghana, its sister Non-Governmental Organization (NGO) needed for work in West Africa.

Today, Point Hope has grown from a handful of friends gathered around Delilah’s kitchen table making hundreds of tuna fish sandwiches for hungry families, to a non-profit organization that helps refugees in Buduburam and the surrounding district, helping the community there each month by nutrition, funds for education and access to medical care.

Needed: Sterile Bandages for Children

The patients in the Buruli ulcer clinic badly need sterile bandages to protect from further infection after the wounds are healed, but the clinic has no funds to replenish the bandages. Instead, the patients must wash out their bandages and reuse them.
 
We are seeking donations of medical grade gauze bandages, Kerlix antimicrobial bandages, Coban self-adhering wrap and latex-free nitrile exam gloves to stock the clinic. A wonderful listener just wrote to me and said she found all of these items at Drugstore.com at decent prices and had them shipped directly to Point Hope’s office. If you can help us stock the clinic with these much needed sterile supplies, we would greatly appreciate your support.

Moore's Ham & Broccoli Quiche

Ingredients:

1 frozen 10" pie crust, unbaked

1 cup diced ham

1 cup broccoli, cooked, chopped, and drained well

4 oz mushrooms, sliced

3 eggs, beaten

1 cup half and half

1 1/2 cups shredded Swiss cheese

2 T Moore's Original Marinade

2 T butter, melted

1/2 tsp salt

1/4 tsp black pepper

1 T flour

 

Instructions:

Bake pie crust according to package directions. Let cool.

In a large bowl combine eggs, half and half, 1 cup of Swiss cheese, Moore's Original Marinade, butter, flour, salt, and pepper; stir with a whisk.

In the pie crust, layer the remaining ingredients in this order: broccoli (well drained), ham, mushrooms, 1/2 cup Swiss cheese. Then, pour the egg mixture over the top.

Place the filled crust on a cookie sheet and place in a preheated oven at 375 F.

Cook for 40-45 minutes or until the pie sets completely and is golden brown.

Apple Cookie Crumble

Filling:
4 Granny Smith or other baking apples
1/4 cup dried cranberries
1/4 cup brown sugar
1 tsp. each cinnamon, nutmeg, cloves (or to taste) 

Topping:
8-10 oatmeal cookies
1/4 cup butter

Instructions:
You need a microwave safe pie pan or other dish. Spray or butter the pan or dish.

Core and cut apples in thin slices. Peeling is optional to taste.

Place in microwave safe baking dish.

Add dried cranberries, brown sugar and spices as desired. 

In a plastic bag crumble the cookies.

Scatter on top of apple mixture.

Dot butter all over the top of the cookies. 

Bake in microwave 8-12 minutes depending on the power of the microwave. 

Add a scoop of vanilla ice cream when serving, if desired.
