The Opera Sisters | September Book Club

For much of history we didn’t hear a lot about heroic women. Thankfully that’s changing. Women have always been compelled to take tremendous risks for those they love and causes they are passionate about, and their stories are finally being told.

Like my book club pick for September, “The Opera Sisters” by Marianne Monson. Out September 6th!

It’s about the Cook sisters, British citizens who devote a large portion of their limited resources to the enjoyment of opera, often traveling throughout Europe to take in performances. Not the swashbuckling heroes we’re used to hearing of, but in 1930’s Europe the relationships they’ve built, and their established travel habits put them in a position to be of tremendous service - if they dare.

Even The Dog Knows | August Book Club

Even before I had my farm animals were a big part of my life. From birth to current day, every chapter of my personal story has had a family pet at the center. They are the other family members whose roles are vastly more impactful and important than we may ever fully realize.

My book club choice for the month of August speaks to that.

“Even The Dog Knows”, by New York Times best-selling author, Jason F. Wright, is about a family who’s been torn apart by grief.

Each member, now distanced, isolated, and lonely… and their dear old pup, who may provide the glue that can bring them together once again. The jacket reads: “A family’s old, beloved dog takes a final road trip to help his people find forgiveness and healing.”

“Meg Gorton finds herself alone and lonely in Florida. Cucumber - Onion Salad

Salad was on the table for every family meal my mother ever made. (Or at least something she'd refer to as salad. )

In the summer months, when the garden was "putting on", it would be thick slabs of beefsteak tomatoes on top of a slice of Wonder Bread slathered with Miracle Whip, with a generous dash of salt and pepper...

Or, on the rare occasion there wasn’t a tomato to be carved up, a bowl of cucumber and onion, marinated in a bit of water and vinegar for only the amount of time it took her to pound, dredge, and fry the round steak and boil the potatoes, would suffice. These too, we’d make an open-faced sandwich with - minus the Miracle Whip, plus a little butter - and call it “salad”!

I'm sharing the recipe with you today not because its new, or novel, or difficult, but for all the other reasons; it's old, it’s nostalgic, and it’s easy. It’s also cool and refreshingly delicious on a hot summer evening - like all the evenings have been as of late. Eat it as it was probably meant to be eaten - as a side salad - or try it with bread and butter like my folks always did. Either way, it’s yummy!

Cucumber - Onion Salad

Ingredients:

  • 1 large cucumber, peeled and sliced

  • 2-3 slices of sweet or red onion

  • 1/2 cup white vinegar

  • 1 cup cold water

  • 1 heaping Tablespoon of sugar

  • 1 teaspoon salt

  • 1 teaspoon pepper

Directions:

  1. Peel and slice cucumber, and slice onion - seperating rings. Place in a bowl and add vinegar, water, sugar, salt and pepper.

  2. Mix well.

  3. Refridgerate for at least 45 minutes.

  4. Serve.

Feel free to adjust the vinegar to water ratio, the sugar, and salt and pepper to taste! Enjoy this nostalgic taste of summer!

Lemon Angel Hair Pasta | Maria Martella (Repost)

I originally posted this recipe waaaay back in 2017. I had made a request via social media for you all to send me your favorite recipes, and Maria Martella came through for me!

It had been submitted as a good “winter” recipe, but it looks so refreshing and divine, I’m posting it again, in the middle of summer, because, well, lemon, and yum!

It looks like it could also easily be served cold and might just be the perfect thing to take to your next backyard gathering.

LEMON ANGEL HAIR PASTA

Ingredients:

  • 4 cups Chicken Stock

  • 2 cups Water

  • 1/2 lb Angel Hair Pasta

  • 1-2 T Extra Virgin Olive Oil

  • 3 lemons

  • 1 Head of Garlic (10-12 cloves)

  • 1/2 T crushed hot pepper flakes

  • 2T Oregano (or more to taste)

  • Shredded Parmesan Cheese generous amount

 Directions:

  1. Bring 4 cups of Chicken stock and 2 cups Water to boil in large pot.

  2. Add Angel Hair Pasta (or any thin variety), adjusting amounts of liquid as needed. Cook until al dente. Drain pasta; place liquid aside.

  3. In the meantime, heat EV Olive Oil in saute' pan.

  4. Wash, roll, and juice 3 lemons, and zest the rind lemons, into saute' pan, add crushed hot pepper flakes, minced, grated or whole garlic. and oregano. Saute' for approximately 5 minutes over medium-high heat.

  5. Toss lemon/pepper/garlic mixture in with pasta. Use a little of the liquid to loosen pasta if desired.

  6. Sprinkle liberally with shredded Parmesan cheese.

  7. Serve as a side to chicken, fish, or pork.
     

A note from Maria: This is so quick and easy, you can add, roasted vegetables, chicken or shrimp to make an entire meal. Use vegetable broth for a vegan side. Use mint, parsley, or basil, whatever you have on hand; the secret is in the fresh lemon juice and zest. Its very versatile, warms my soul and brightens it too! 


The Stranger In The Lifeboat | July Book Club

Back in March, I had the great privilege of hosting impactful author, Mitch Albom, on my bi-monthly podcast series, LOVE SOMEONE with Delilah. Mitch came aboard to share some powerful messages of hope and healing.

His last two books, "Finding Chika", and, “The Stranger In The Lifeboat", are inexorably tied; the first about the grief of losing his beloved daughter, and the second, about healing. If you haven’t had an opportunity to listen to this episode yet, please do so now!

I decided after our conversation to make “The Stranger In The Lifeboat” one of my monthly book club choices this year, and July is the month!

The drifting lifeboat is a metaphor for desperation, for those crying out to God for help, (and demanding the cry be answered with the swiftness and accuracy of a fast food order). The story he’s woven together about a group of shipwreck survivors, and the stranger they pull out of the water several days later, sifts through all the theological ponderings of a varied group of believers and non-believers, as they spend their days and nights waiting and wondering if they’ll be saved.

And all the while it reads like a great Agatha Christie “whodunit”, pulling you deeper and deeper into the mystery as you try to sort and arrange the clues that will lead to the “ah-ha!” solution.

Mitch Albom became a household name after the release of "Tuesdays with Morrie" a memoir of his visits with his old college professor during the last days of Morrie's life. It was a book full of lessons on living, dying, and love.

Since then he has continuously put forth works just as insightful, compelling, and inspiring, like The Stranger in the Lifeboat, available on Amazon and wherever books are sold.

While his books have sold over 40 million copies, you might also be interested to know that Mitch is an accomplished songwriter, pianist and lyricist too. He and wife, Janine, work tirelessly to better the lives of the suffering at the orphanage they have committed their lives to in Haiti and the many other charitable organizations they’ve helped to established and support.

New Music from Chicago!

Chicago has released their first new music in eight years!

“If This Is Goodbye” is a catchy tune employing their classic pop tempos and sensational signature horns, but it’s also a wistful look back at the memories made in youthful recklessness that have lasted a lifetime - now winding to an end.

It reminds us too, that though paths diverge, we should never turn our backs on those companions we traveled the first miles of life with.

This summer, Chicago will co-headline a tour with Brian Wilson, an original founder of The Beach Boys. They will also be joined by Al Jardine and Blondie Chapman.

The Summer Tour kicked off this week in Phoeniz, AZ and will hit some 40 venues all across the country until coming to a close on October 20 in Memphis, TN. It’s going to be a phenomenal show, with plenty of nostalgia and music to get you up on your feet! You can find information and dates HERE.

Rhubarb Compote

It’s rhubarb season!

These prehistoric-looking plants come into their full glory in late spring and if you are lucky (or unlucky) enough to have some in your garden, or your neighbor does, after the first few delicious pies and crumbles you begin to wonder… “What in the world do I do with it all?!”

This is about the time you find yourself offloading onto first grateful friends and then the unsuspecting masses - leaving bundles of the long red stems on porches and car hoods!

If you’re already tiring of sweet desserts here’s a recipe you may appreciate; Rhubarb Compote.

It is especially timely with Father’s Day around the corner as it adds something truly special to a masculine meal of savory pork chops pulled off the new grill he may have spent the day assembling!

The following recipe calls for honey, but it doesn’t make it sweet enough for my family’s liking. Feel free to add sugar or brown sugar to taste and also play with whatever ingredients you have on hand!

Sometimes diced green red or green bell pepper makes a tasty addition, as does a dash or two of soy sauce. It’s finding the right balance of sweet and savory that appeals to YOUR palate… so don’t be afraid to make it your own!

Ingredients:

  • 2 Tablespoons +/- olive oil

• 1/2 small onion, (red or sweet) diced

• 1 clove minced garlic

• 4 large stalks rhubarb, cut into 1/4-inch pieces

• Juice of 1 large orange

• 1 teaspoon grated fresh ginger

• 1/4 cup of honey

• 1 teaspoon salt

Directions:

  1. In a medium saucepan, heat the olive oil over medium-high. Add the onion, sautéing until tender and translucent. Add the garlic and cook for just another minute or two more.

  2. Lower the heat and add the rhubarb pieces, the orange juice, and freshly grated ginger. Combine well, and cook, stirring occasionally until the rhubarb is soft and tender. Do not cook so long as to turn the rhubarb to mush, you want some soft chunks to remain.

  3. Remove from heat. Add the honey and salt.

  4. Give it a taste test. Sweet enough? If not, add more honey or some brown sugar. Needs balance? Add another pinch of salt.

  5. Pull your chops from the grill and top generously with compote. Garnish with a spring of rosemary if you have it for a lovely presentation.

New Music | Mandy Moore: "In Real Life"

Mandy Moore’s much anticipated new music album is finally here! The 11-track album,“In Real Life”, releases Friday, May 13th, and I’ll be the first in line!

I spoke with Mandy while she was busy wrapping up the final episodes of “This Is Us” and simultaneously getting ready to launch this new album. You can listen to that conversation - one of the most fun I’ve had on my podcast series, LOVE SOMEONE with Delilah - HERE.

Mandy dropped several hints about her new music during our conversation. I know it came fast on the heels of 2020’s “Silver Landings” , her first new body of work in over a decade, but unfortunately the pandemic prevented her from touring and sharing that project as widely as she’d planned.

A brand new baby with husband, Taylor Goldsmith, took centerstage instead, but as opposed to burying the momentum that had been set into motion, the magic and mysteries of motherhood served to expand that creative energy, and “In Real Life” was born.

What can we expect? It’s being described as “a gloriously unpredictable sound, touched with elements of everything from jangly college-rock to cinematic synth-pop to classic singer/songwriter simplicity.

With its elegant collision of moody guitar work, glacial synth lines, and luminous strings, the slow-burning epic captures the blissful upheaval of becoming a mother (“I spent every day/Filling every page/How the world revolved around me/When I saw your face/I knew right away/We’d be whoever we wanted to be”)…

I’ve found another Proper Romance book to delight you with this month! My May book club choice is “Games in a Ballroom” by Jentry Flint.

We’ve closed the binding on yet another Proper Romance, but I guarantee we’ll be thinking of petit fours and party frocks for a long while to come. At the same time, we’ll be thankful that we are free to love and live lives of our own choosing these days!

It’s time to get back to the realities of today, but go ahead, keep wearing your tiara!

The Heartbeat of Motherhood - with the American Heart Association

My mother was a powerhouse of love and industry.

She raised 4 children and never sat still long. She was always cooking, canning, making, baking, sewing, crafting, gardening or planning. She was always doing for others, volunteering at her kids schools or for the many community clubs and organizations she belonged to. She rarely took time for herself, and I believe that contributed to her early death at age 57.

Cancer took my beloved mother, but previously she had suffered a serious heart attack that did lasting damage and prevented her from living her life to the fullest.

I wish my mother had known that heart disease is a woman’s greatest threat, and the warning signs of heart attack and stroke, so that she could have made lifestyle choices to control some risks, as well as getting the tests and treatments she needed.

I don’t know if my mother would be with us today if she had, but I know that her life while she was still here would have been better for it!

I think of my mom every day, but try to do something each Mother’s Day that would make her smile. I’ve found a great way this year - donating in her name to the American Heart Association. You can do this for your mom too!

One very special group of women this will help is expectant mothers. Did you know that cardiovascular disease is sadly the number 1 killer of new moms and accounts for 1/3 of maternal deaths? I was shocked to hear that statistic! It’s so critical for women to learn their risk factors and prioritize their own health before, during and after pregnancy. For themselves and their babies!!

I'm teaming up with the American Heart Association’s Go Red for Women movement to spread awareness about the connection between pregnancy and cardiovascular health. I know you and your mom will agree, losing even one mom is too many. We have to reclaim today for a better tomorrow and there’s another really powerful way we can do that this May.

We’re encouraging women to learn important health numbers that can help them determine their risk for heart disease: total cholesterol, blood pressure, blood sugar and body mass index ​​(BMI).

Knowing your numbers can allow you to take action early, address your personal risk factors, and lower your chance of developing heart disease later in life.

Teriyaki Salmon Skewers

Serving up a special brunch to Mom this coming Mother’s Day? Wow her with these tasty teriyaki salmon skewers on May 8th!

Super simple, super delicious, super special, after mixing up the teriyaki sauce, these come together quickly and are a complete show-stopper! They are rich in heart-healthy omega-3’s too! Serve with rice and your favorite veggies, or along side a mixed green salad for a full meal deal.

Mom - or any special lady in your life - will be impressed with your culinary skills and the care you took to show her that she deserves to be treated like the queen she is!

Serves 4

Ingredients:

  • 1 tablespoon sesame oil

  • 1 tablespoon minced garlic

  • 1 tablespoon minced ginger

  • 2/3 cup water + 2 tablespoons

  • 2/3 cup soy sauce

  • 1/3 cup sugar

  • 2 tablespoons rice vinegar

  • 2 tablespoons cornstarch

  • 2 lbs boneless, skinless salmon cut into 1-inch cubes

  • 8 - 8” wooden skewers - soaked in water for at least one hour to prevent burning

  • sesame seeds for garnish

Directions:

  1. Heat 1 tablespoon sesame oil in bottom of a small saucepan.

  2. Saute the minced garlic and ginger over med-low heat, about 1 minute.

  3. Turn heat to high, add the 2/3 cup water, soy sauce, sugar and vinegar and bring to a boil.

  4. Reduce heat to low, stirring until the sugar has completely dissolved.

  5. Mix the cornstarch with 2T water to dissolve, then whisk into sauce to thicken.

  6. Simmer for a few minutes.

  7. Divide sauce into 2 bowls, one for basting, the other for serving.

  1. Toss salmon chunks with half of the basting sauce then thread onto skewers using similar portions for each skewer (about 1/4 of a pound each).

  2. Arrange with space between each on baking tray and baste with more sauce.

  3. Place under broiler for 3-4 minutes, turning once, and basting before placing back under the broiler to finish cooking, another 3-4 minutes.

  4. Remove from broiler and sprinkle with sesame seeds before serving 2 skewers per person.

I know Mom is going to love this splendid and celebratory meal, and I hope it helps to make her day - and yours - a very special one.

I wish my own mama were here to spoil, but I’m sure she’ll be enjoying the equivalent of a Mother’s Day grand banquet in heaven. What a special gift we were given when we were given mothers! And equally, what a special gift it is to BE a mom.
