New Movie | "I Still Believe"

I Still Believe.png

There is a phenomenal new movie coming to theaters this spring. “I Still Believe” the true story of Jeremy Camp, is available OnDemand, Friday March 27th!

OnDemand Download Here

Camp, as many of you know, is a Grammy-nominated Christian singer and songwriter. He’s sold more than 5 million albums and has fans world-wide. He, and his music, which includes singles “There Will Be A Day,” and “Overcome,” (as well as many many more) are so beloved, he’s become nearly legendary.

I can say the film is phenomenal because I was fortunate enough to get a sneak peak! (This radio thing has it perks!) It covers the very personal journey of faith, hope, love… and music that Camp undertook with his first wife, Melissa. It’s got a star-studded cast that includes K.J. Apa and Britt Robertson as Jeremy and Melissa, with Gary Sinese and Shania Twain portraying his parents.

The film does a beautiful job of demonstrating how God can, and will, carry us through the toughest of times.

Watch the Trailer on Facebook

You wouldn’t expect a film like this to have anything but incredible music, and I Still Believe doesn’t disappoint. Thankfully, the soundtrack will be available digitally on March 20, shortly after the film is released on the 13th.

Lakeshire Park | March Book Club

Lakeshire Park.jpg

Order Lakeshire Park

The month of March just came striding in, bringing with it the first tender shoots of a green spring. And nothing goes hand-in-hand with spring better than romance…

Lakeshire Park, by Megan Walker, is my book pick for this month. It’s a lovely little romance set in Brighton, England, in the year 1820.

Two sisters, Amelia and Clara Moore are about to find themselves without means or home… so what’s a girl to do back then but conjure a white knight - or at least a suitable bachelor - to sweep her off her feet and into stable circumstances?

If only it were that easy!

Join the sisters on their quest while rooting not only for them to find a roof over their head but, (dare we suggest it?) loving partners as well!

Here’s what the publishers have to say about the PROPER ROMANCE ® line:

These books don’t have sex, swearing or graphic violence. They are ‘books your grandma would read.’

Step into a world of clean, smart, and engaging romance stories with a strong, relatable heroine and a devastatingly handsome hero! Our series seeks to tell stories filled with intrigue, flirtation, and that much anticipated kiss that will never embarrass the reader. These stories feature wonderful characters, obstacles to overcome, and happy endings.

I loved reading romance novels when I was young, and I’m glad my girls can pick up a book like Lakeshire Park, and enjoy the historical details, the interesting characters, and the “happily ever after’s” without being subjected to much of the graphic nonsense that’s floating around out there these days.

Just to make sure, I’ll give them a read myself, perhaps with a picnic, on a blanket spread under a tree full of cherry blossoms… Ah, romance!

Lakeshire Park, the 30th book in the Proper Romance line, is available now!

Music Notes | Sam Smith: "To Die For"

Sam Smith is about to drop a brand new album on May 1st!

But before we get to dive into the full meal deal, the Grammy award-winning artist served us up a Valentine’s Day appetizer in the form of a single; the first song and also the title track from the album, “To Die For.”

Watch the Video!

Sam has been a listener favorite, and often requested artist since the US breakthrough “Stay With Me,” now certified 4x platinum with over a BILLION streams on Spotify. That, along with “I’m Not The Only One,” and many many more are requested so frequently, I’ve lost count how often!

“Releasing this song is going to be a wild one – I feel like it’s from one of the deepest parts of me,” explains Sam Smith. “I wrote this with Jimmy Napes and Stargate in L.A. during a time of self-discovery and heartbreak. This is for all the lonely hearts out there on another Valentine’s Day xx.”

I know this too will become a perennial favorite!

Recipe | Cake Batter Protein Bites

IMG_0260.JPG

Love is in the air…

Valentine’s Day might have been conceived as a marketing ploy by the holiday card companies but it is one of my favorite days of the year. And while my motto is to Love Someone all year long, it is nice that there’s a whole 24 hours dedicated to spending quality time with your sweetheart (or whomever it is you love & adore).

Baking an entire cake from scratch on a weekday is a find aspiration, but sometimes just isn’t in the cards (heart-shaped ones or not!) because of our busy lives. So often, we’re then tempted to grab something from the nearest grocery or convenience mart that comes in a box and is guaranteed to be full of processed coloring and added sugars.

So, if you are anything like me and are trying to stay healthy-ish as we embark upon a new decade, but still want to enjoy a sweet TREAT this Valentine’s Day…do I have a sweetheart of a deal for you with these delicious little protein bites!

CAKE BATTER PROTEIN BITES

Lionheart | February Book Club

thumbnail_Francisco_US_Trade_Hard_Cover.jpg

by David Francisco Platillero

Get Lionheart

About a year ago, I ran across one of the most touching videos on Facebook… it was a wedding proposal in the sweetest of settings, a wooded area with sparkling twinkly lights, and two of the most beautifully earnest people who were obviously over-the-moon in love. The man walked with the aid of forearm crutches, before getting to his knees, and from the second she realized what was unfolding, the woman was crying…

Watch the proposal video

thumbnail_Book_Photos.jpg

Fast forward to an email I received a few weeks back telling me that the man kneeling in that video had written a book and recorded a music CD chronicling his journey - their journey - of “love, forgiveness, and the power of music.”

David Francisco Platillero is his name, and the first 24 years of his life read a bit like an American fairy tale; a happy, smart, and capable kid growing up in Knoxville, Tennessee with a loving, supportive family.

Involved in church, school, and music, and very very active, David went on to college and got a degree in electrical engineering, but soon decided that music, and music production, was where his heart and his passion lie. So in April of 2016, he packed up a few belongings and headed to Nashville where he’d enrolled in The Blackbird Academy (Owned by John and Martina McBride) to become the best music producer he could be.

23 days later the world David knew stopped. He was hit while riding his bicycle by a distracted driver, gravely injured, and told he would never walk again.

On February 14, 2020 his book, Lionheart, and the accompanying CD will be released. (I got an advanced copy!) Chapter by chapter, David recounts the days after the accident. Lionheart is an eloquent self-portrait of the talented musical artist that captures the pain, the progress the lessons, the love, and the miracles that define David’s new life.

By no coincidence, the chapters and song titles match, and David’s recommendation is that you read a chapter and then listen to the corresponding song for the story to be an experiential one for you, the reader, as well as for him, the writer. Lionheart is a book. Lionheart is a CD. Lionheart is a movement that aims to empower people to find purpose.”

David and his bride, Kristi, joined me recently on LOVE SOMEONE with Delilah to record a podcast, which will drop a little later this month. Get the book and the music CD before that happens and then make sure to listen in! The story will amaze and inspire you and his music is so so good!!!!

Music Notes | Celine Dion: "COURAGE"

Screen Shot 2020-01-23 at 1.06.37 PM.png

After six looooong years of waiting, a new Celine Dion album is here! Courage, her 12th English language album was released in November and it is being received with much excitement and gratitude!

Buy Courage

Celine is a staple of my radio program. Countless numbers of callers have requested her music for all of life’s celebrations; new loves, old loves, birthdays, bar/bat mitzvahs, anniversaries, adoptions, promotions and parties, there’s a Celine song for that!

Screen Shot 2020-01-23 at 1.07.25 PM.png

Courage, her new album, is all about where Celine is right now in her life - and not surprising, will resonate with millions of her fans that’ll hear a little of themselves in her music. She’s learning to live without her husband by her side, but instead within her heart. She’s watching her boys grow and change and championing their growth as well as her own. She’s on tour by herself for the first time, since the kids are involved in school and sports and in very good hands back home.

It’s a time of intense challenge, discovery, and COURAGE!

We’re chatting about it in an upcoming podcast on LOVE SOMEONE with Delilah, so be watching for it to drop on Tuesday, 1/28!

Be sure to pick up COURAGE and if you have the opportunity, get yourself tickets to her Courage World Tour!

Work in Progress | January Book Club

Work in Progress.jpg

Work In Progress

Are you living your life by design or by default? That’s the question my January Book Club pick, Work In Progress, begs.

I’ve often told the story of how I was fired from one radio job after another before finally landing in the role I’ve had since 2002; Nationally syndicated radio personality and owner of my own production company. Oh, my friends, there is soooo much truth in the axiom, ‘What doesn’t kill you makes you stronger!” I’m a stronger, more confident, and much more successful person that I would have been had I stayed in one of those earlier, low-paying, single market jobs.

Work In Progress, is another story of failure leading to success, this one told by a sibling duo originally from suburban Pittsburgh, Pennsylvania, and now known as the king and queen of eclectic-design chic with their own HGTV show.

Leanne Ford and Steve Ford were born with creative spirits that manifest themselves in unique and unexpected ways. Their design aesthetics weren’t always embraced by mainstream, but by allowing their inner voices to guide them, and by never giving up, and never letting fear get in the way of a great idea, they too fell upon the perfect platform for their passions and abilities.

So what’s this book going to do for you? Well, Leanne and Steve want to know what makes you feel most ALIVE?! And once you’ve answered that question, they want you to take that passion and use it to see your dreams become your realities. They hope that by not only sharing their story, but also a few secrets, and some tried and true processes, they can help you navigate the many mine-fields that growth and success place in your path, and help you to realize the big-picture plan for your life.

As they see it, life is a creative process and at the end of each chapter, Leanne and Steve will ask questions to help you design an extraordinary life. Because, it's NEVER too late to pursue your next dream!

Bacon & Cheddar Doggie Biscuits

IMG_8088 2.JPG

In the midst of all this holiday cooking and gathering around our friends and family, let’s not forget about our furry friends!

When it comes to doggies biscuits, I tend to stick to simple and whole food recipes to ensure my pals are getting tasty and nutritious treats!

And when one of my lovely friends sent me photos of the treats she just made her pups I HAD to share them, (with permission of course!) Luckily, she loves to document her recipes through photos and agreed to send them my way! She also confirmed that they were DEVOURED, because they were so yummy!

Here’s the recipe and instructions so you have something to share with your four-legged “fur babies.” No pets of your own? Your friends and neighbors will be touched if you were to gift some to theirs!

IMG_8092.JPG

Ingredients:

  • Oat Flour - 3 Cups

  • Bacon (cooked and crumbled) - 8 Strips

  • Shredded Cheddar Cheese - 2 Cups

  • Eggs - 4

Directions:

  1. Preheat oven to 350 degrees Fahrenheit

  2. Add oat flour, bacon, and cheese to a food processor and combine until the ingredients reach a crumble like texture.

  3. Then add your eggs

  4. Mix

  5. Sprinkle flour out onto flat surface and roll the dough out until it is about 1/4 inch thick. Using the cookie cutter of your choice (I used little stars) begin to cut dough into desired shape.

  6. Transfer treats onto a baking sheet lined with parchment paper

  7. Bake for 20 minutes

  8. Let cool and then store in your favorite container!

Depending on the size of your cookie cutter this recipe can make 3-4 dozen treats!

Turmeric Roasted Cauliflower

thumbnail_Facetune.jpg

Want a tasty and healthful side-dish for one of the many holiday meals you’ll be hosting or contributing to? I’ve got just the thing! This delicious - and super easy - Turmeric Roasted Cauliflower!

While I LOVE my green-bean casseroles as much as the next person, I know that more than a small helping each season would be considered an over-indulgence. This dish, whose star players are making headlines ‘round the globe for their nutritious, high-fiber and inflammatory properties, has no such guilt attached. I can (and did!) go back for seconds (or thirds) and feel GOOD about myself for doing so.

Roasting the cauliflower in a HOT oven, crisps and browns the edges and gives it a little bit of a sweet taste, which plays off the earthy turmeric spice in a lovely way. The garlic and sweet red pepper adds depth that would be missing if it were just roasted on its own.

If you want to add even more texture to the palate, and create a heartier side, top it with some roasted pumpkin seeds. (sunflower seeds or even slivered almonds wold work too!)

This photo was taken at a family Thanksgiving gathering, where even my grandkids dug in - No better endorsement than that!

Ingredients:

Screen+Shot+2019-12-02+at+10.46.09+PM.jpg
  • 1 large head cauliflower, cut into 1 florets

  • 1 sweet red bell pepper, cut into 1” pieces

  • large head of garlic, peeled and minced

  • 1 Tablespoon turmeric powder

  • 1/2 teaspoon white pepper

  • 1/2 teaspoon paprika

  • kosher salt

  • olive oil

  • roasted pumpkin seeds, sunflower seeds, or

Instructions:

  1. Preheat oven to 450 degrees F.

  2. Trim the leaves and remove the core of the cauliflower, then cut into florets about 1-1/2”. Place them in a large mixing bowl.

  3. Add the bell pepper and minced garlic

  4. Drizzle a liberal amount (1/8 - 1/4 cup) of olive oil over the vegetable mixture and turn several times to coat.

  5. In a small bowl, combine turmeric, white pepper, paprika, and good dash or two of kosher salt. Mix. Shake over cauliflower, pepper and garlic, toss together until evenly coated with oil and spices.

  6. Spread in an even layer onto a large baking sheet.

  7. Roast in a hot oven for 20-30 minutes. The cauliflower should be tender but not overly soft, and nicely browned and crisp in several places.

  8. For an added crunch and heartiness, sprinkle with roasted pumpkin or sunflower seeds, or slivered almonds.

  9. Serve hot.

Nerves of Steel | December Book Club

Screen Shot 2019-11-29 at 10.00.56 PM.png

NERVES OF STEEL

Like me, when hearing stories that involve amazing feats of incredible strength, character and composure, you probably ask yourself, “How were they able to DO that?!” and, “Would I have been able to do it?”

And, like me, you’ve probably heard the story of Southwest Airlines Flight #1380, when on April 17, 2018, a Boeing 737 experienced catastrophic engine failure causing an explosion that severed hydraulic and fuel lines, tore away sections of the plane, punctured a window, and took a woman’s life…

Were those your questions about Captain Tammie Jo Shults, and her first officer, Darren Ellisor, who were able to somehow stabilize the aircraft and safely land, saving 148 people aboard? They were certainly a few of mine!

Nerves of Steel, my December pick for the Delilah’s Book Club is going to provide the answers and so much more!

Nerves.jpg

This is Tammie Jo’s story; the daughter of a humble rancher who became one of the Navy’s first female F/A-18 Hornet fighter pilots. The book will tell you how she became a flight instructor, and after leaving the Navy, a commercial airline pilot, and how she developed the skill set, along with the thick skin and the self assurance needed to persevere through the many obstacles and set-backs she faced before that fateful April day.

When you’ve had THOSE questions answered, you’ll know just what kind of person, and what kind of pilot she is, and you’ll have a much better idea of the internal power she was able to draw from to get that plane under control and back on the ground without any additional lives lost

At no point in her life or her career was Tammie Jo promised success. In fact, she faced opposition at every turn. But she only allowed that to fuel her desire to succeed. And so, 20 minutes into a routine domestic flight (that she wasn’t even originally scheduled be on, ) when everything went terribly terribly wrong, Tammi Jo Shults was the very thing necessary to set all to rights.

In her mind (and mine!) there is no doubt that God prepared her and placed her where she needed to be that day. Nerves of Steel is one of those books that seems to come along just when you need it; when you might be questioning yourself or your path. It’s the remarkably inspiring story of a remarkably inspiring woman, who reminds us that we all have a greater purpose than perhaps we are even aware of.

(It would be an inspiring read to find wrapped and under the tree come Christmas morning!)

A Season of Generosity | Giving Back

I was taught from the time I was a small child that the holiday season is the time for giving, which is why I’m calling it the Season of Generosity.

My parents loved this time of year; my dad spent hours in his wood shop and my mom’s sewing machine seemed to never stop humming. There was always something baking or simmering on the stovetop.

IMG_3400.jpg

They not only created most of the gifts my siblings and I found under our tree, but there were also piles of baskets and boxes stuffed with gifts and treats that went out to countless friends, neighbors, and coworkers.

level of softness

Simple and heartfelt gestures:

  • Volunteer to watch someone’s children for a few hours so they can do some shopping, prepare some meals, work on holiday projects.

  • Treat your co-workers with some home-baked goodies or a big bowl of fruit to help keep immune systems healthy through the winter months.

  • Make some home-made doggie treats and give them out to dog-walkers passing by.

  • Do you sew, knit, or crochet? Those are some mad skills! Put them to use making hats, scarves, blankets, and booties - give to loved ones or donate to organizations that will distribute to those in need.

  • Create spa-like baskets for the overworked ladies in your life! Add a candle, some bubble bath or bath bombs, scented soaps or lotions, mani-pedi tools, a fluffy loofa - all items can easily be found at your local dollar store but come together to create a luxurious gift item.

  • Volunteer! How ‘bout some of these Nationally recognized places??? Anything spark a passion with you?

  • And if you find that you have just a little something in your bank account that you’d like to bless someone with, consider making a donation to a charitable organization of your choice. (Might I suggest Point Hope - a voice for forgotten children?!)

Donations to one of these groups will help put gifts under to tree for children that wouldn’t otherwise have one to unwrap. i

I hope you find the joy in giving back this season! There is so much to be thankful for, and I am beyond thankful for all of you, my listeners, my readers, my supporters!

If you have more ideas for ways to give back please share them in the comments section or visit me on my Facebook or Instagram (@radiodelilah) pages and comment there.

Happy Holidays my friends!

I’ve included an autographed copy in each of my 12 Stockings this year with the hope that you will enjoy it and it will inspire you to reach out and help me change the world. All we need is love and a heart that is willing to serve.

Christmas Music is Here!

Screen Shot 2019-11-14 at 12.44.21 PM.png

Oh my word, how I LOVE Christmas!

The Delilah show has been Your Christmas Station for several decades now, and along with the tried and true (and able to sing-along-to) carols we all know and love, I’m like a kid opening their stocking when I gleefully unwrap all the newer holiday tunes of the season.

Sometimes, through the beautiful instruments, harmonious melodies, or humorous lyrics, I become so entranced and drawn into the spirit of the music, my ears almost pick up what I think to be the prancing and pawing of each little reindeer hoof, gently alighting upon my rooftop. Do you hear what I hear?

Here’s a run-down of some of the best newer Christmas music - I recommend you add them all to your Christmas play list!

Kacey Musgraves: A Very Kacey Christmas

Some thought it early in the game for country sweetheart, Kacey Musgraves, to release a holiday album in 2016, but the collection has proven to be anything but premature! In fact, it seems like it could have been something we all grew up with, alongside the silvery tinsel and chunky Christmas tree lights with half the paint missing from each bulb.

Kacey blends classy with kitsch on this already beloved and very nostalgic holiday endeavor. If you’re anything like me, you’ll love Christmas Don't Be Late, A Willie Nice Christmas (featuring Willie Nelson and Trigger) and Ribbons & Bows.

But don’t take my word for it. Read more about A Very Kacey Christmas HERE then purchase it for your own collection!

For the last few Christmas seasons, I’ve been recommending the Burn the Ships album, and this year, I am encouraging you to take a listen to their collection Christmas / Live from Phoenix. You’ll find their music to be uplifting, spiritual, and alive with incredible harmony!

Idina Menzel: A Season of Love

You may be familiar with Idina Menzel because of her iconic role in Frozen and that ONE song that’s been in our head since it’s release, Let It Go… But here’s another reason to get to know this super talented actress and songstress, she’s released a Christmas album with a whopping 18 tracks to it, including several duets with folks such as Ariana Grande, Billy Porter, Josh Gad, and her talented hubby, Aaron Lohr.

The duet with Ariana, A Hand for Mrs. Claus, is an original, written by the composers of the Frozen soundtrack, Kristen Anderson-Lopes and Robert Lopez. It puts me in a cookie-baking mood for sure! I’m equally impressed with the new song by Idina, At This Table, that she wrote with Jonas Myrin. It’s all about celebrating diversity and embracing those different from us during the holiday season!

A Season of Love also includes classics like, The Most Wonderful Time of the Year, Ave Maria, and I’ll Be Home For Christmas, as well as many new numbers that will wrap you in the spirit of love all season long. This is a must have for your collection!

Matt Nathanson: Christmas (Baby Please Come Home) & River

Bay Area singer songwriter Matt Nathanson is a delightful and insightful guy that’s a BIG favorite of a family member who introduced me to his music. He’s just released a couple of singles that deserve our attention: Christmas (Baby Please Come Home,) and River. I love both, and am sharing HIS thoughts about these songs and what they mean to him, because it so perfectly captures his spirit and provides a compelling reason to give them a listen!

“The first time I heard Christmas (Baby, Please Come Home) was U2’s cover of it for the A Very Special Christmas charity album. I loved how the song felt like a celebration, but had this thread of sadness and longing running through it. For me, the holidays have always felt like that. Friends and family coming together at the end of the year, the beauty and starkness of winter contrasted with all the warmth of togetherness, joy and longing… This song is magical like that. It captures it all.”

and…

”Joni Mitchell is one of the greatest songwriters we have. A treasure. And this (RIver) isn’t a holiday song, per se, but it's become one over the years. Whenever I hear it, I’m immediately transported to the time and place she is singing about; Los Angeles in the 70s, bouncing off the superficial and the never-changing seasons… longing for a move back home, to the place she grew up and the ease and simplicity of youth.”

Get to know Matt, you’ll be glad you did!

John Legend: A Legendary Christmas

Swoon-worthy and critically acclaimed, multi-platinum singer-songwriter, John Legend, released his first Christmas album, A Legendary Christmas last year so it’s still “new” to me and probably many of you as well.

Some of my favorite tracks are What Christmas Means to Me, with the legendary Stevie Wonder playing along on his harmonica! The magical, Christmas Time is Here, and the fun, Purple Snow Flakes, which became Delilah Jr’s favorite the second she heard it! (Can you guess her favorite color?!)

Go ahead, let John Legend croon as you swoon…

Be A Star - With Star Fruit!

thumbnail_IMG_4632-1.jpg

Be the star of the show this holiday season with Star Fruit!

Here’s a tip for dressing up your holiday dishes; Star Fruit!

starfuit1.png

You've seen it in on your grocery aisles, maybe even purchased it to satisfy your kid's’ curiosity, but if you lead your holiday meals with this bright gold star, you'll be considered a true wiseman!

Carambola, or Star Fruit, is native to Indonesia but is now cultivated in many tropical areas. It's about 2-6" long and when ripe it's a deep yellow color. Most of the fruits have 5 ridges, giving it a classic star shape, but some can have more or less. The skin is thin and waxy and may be eaten, just like that of an apple or plum.

Starfruit 2.png

There's no special preparation to eating - just wash, then slice it up as thick or thin as you desire, and remove the seeds.

Use it on your salads - like the spinach, red onion, pomegranate, and star fruit example here. Or in your traditional fruit salad. On your cheese platters, to dress your ham alongside the pineapple, and in your jello-treats.

It's mild flavor, both sweet and a tart, make it a complementary companion to just about every thing on your holiday buffet!*

So go ahead, be the star of the show with star fruit!

* Star fruit should not be consumed by people with kidney disease or on dialysis and can interact with prescription medications much like grapefruit. Do your research if you have any questions!

Tomato Basil Bisque

Screen Shot 2019-10-23 at 2.05.14 PM.png

Fall marks the beginning of soup season in my house (for just about everyone else I know too!) and I’m always looking for new recipes to try.

This week, our studio engineer, Jessica, brought a delicious looking bowl of soup into work with her for lunch… It smelled so good as she was reheating it, I had to know what was in it! (I also might have begged a taste…)

Turns out, not only is Jess super bright when it comes to audio engineering… she’s a great cook too! This is a yummy example of a simple, but absolutely fabulous tomato basil bisque that she makes often through the chilly months. I had her forward the recipe to me so I could share it with all of you.

Jessica roasts her own Roma tomatoes, because it’s a fairly easy process. But if you want to whip (blend?) this together quickly, you can pick up a few cans of fire-roasted tomatoes in your grocery aisle.

Jessica’s Tomato Basil Bisque

Ingredients:

  • 1/2 onion - chopped

  • 1/4 cup plus 2-3 tbsp olive oil

  • 4 garlic cloves - minced

  • 20-22 Roma tomatoes, roasted (or 2 cans fire roasted tomatoes)

  • 1/2 package (4oz) cream cheese

  • 2 cups chopped fresh basil leaves

  • 1 cup of half ‘n half

Directions:

  1. Roast tomatoes with olive oil ahead of time using method described below soup instructions.

  2. Cover bottom of stock pot with 1-2 tablespoons olive oil. Place over medium heat.

  3. Add chopped onion and cook until translucent. Add minced garlic and cook about 5 minutes, stirring constantly until garlic begins to brown.

  4. Add the roasted tomatoes*, basil, and cream cheese at this time, and bring to a low boil. If it is looking dry, add about 1/4 cup of water so that the mixture does not scorch.

  5. When the cream cheese has fully melded with the other ingredients remove from heat and allow to cool slightly.

  6. Using an immersion blender, blend in the pot until the mixture is smooth and creamy. Bring up heat once again, and add half ‘n half (or reduced fat milk.) Let sit for about five minutes stirring occasionally then serve.

  7. Garnish with a dollop of sour cream and a fresh basil leaf.

* To roast tomatoes: Cut off stem, slice tomatoes in half lengthwise. Arrange cut side down on baking tray and drizzle with olive oil. Place under broiler for about 15 minutes; remove tomatoes once charred spots start appearing. Let cool, chop coarsely, retaining as much of the juice as possible.

Thanks for sharing your recipe with us, Jessica!

Screen Shot 2019-10-21 at 2.07.55 PM.png

The holidays are coming! The holidays are coming! And what better way to greet them than with a sweet collection of Christmas romances?!

Get A Snowy Little Christmas

My November Book Club choice, A Snowy Little Christmas, is a trio of short stories by beloved authors, Fern Michaels, Tara Sheets, and Kate Clayborn; each easy little read comes with more than a touch of romance, a dusting of snow, and a sprinkling of Christmas magic…

STARRY NIGHT by Fern Michaels

The first in the series, Starry Night, is the kind of delightful treat we’ve come to expect from Michaels (The main character seems vaguely familiar to me…) As the host of a radio program for the lovelorn, Jessie Richmond is surprisingly lonely, especially with the holidays approaching, so she decides to make a trek to her uncle’s bookstore in rural New York state and hold a speed dating event—only to find herself snowed in—with one very special single on her radar.

MISTLETOE AND MIMOSAS by Tara Sheets

And from Sheets, the story of a successful woman who has accomplished many goals and THINKS she’s got it all in Mistletoe and Mimosas… After years of hard work, real estate agent Layla Gentry has her dream home on Pine Cove Island and perfectly content to be on her own. Until her childhood nemesis, Sebastian, comes to town that is! When a snowstorm and a stranded kitten bring them together on Christmas Eve, Layla discovers he’s all grown up—and she may have one more dream left . . .

MISSING CHRISTMAS by Kate Clayborn

The finale, from Clayborn, Missing Christmas shows us that we often find love where we least expect it. It’s all work and no play for two longtime friends-turned-business-partners Kristen and Jasper—until an unexpected kiss all of a sudden makes things very personal. Will it mean the end of something, or the beginning? With a major contract in the balance, Christmas around the corner, and a lot of unspoken feelings, it may take an unpredictable blizzard in New England to seal the deal . . .

So find yourself a cozy reading nook, a cup of hot tea, and a little time to curl up and immerse yourself in some warm and fuzzy Christmas feel-good stories with A Snowy Little Christmas!

"Waffle" Cake - Fun to Make!

thumbnail_IMG_4001.jpg

Recently, Producer Leisa ordered a “waffle cake” from a local maker for a special celebration in her home and showed off photos of this special creation. All of us in the studio were intrigued. What in the world is a waffle cake?!

Turns out, it’s exactly what it sounds like; waffles made from cake batter, stacked and iced, to make a cake! A new food trend we could definitely all get behind. Who doesn’t love waffles? Who wouldn’t want a reason to eat them mid-day or in the evening, smothered in icing?!

So we did a little research (i.e. we “Googled it”) and discovered that you can put almost any kind of batter in a waffle iron… think waffle, banana bread, chocolate cake… yep, it all works! Why did it take so long to think this up?

Leisa had ordered a strawberry cake with raspberry icing, it came gorgeously decorated with natural flowers and dusted with powdered sugar. The studio folks decided to take matters into their own hands this week and celebrate fall - any excuse for cake, especially if it’s a waffle cake!

They decided on carrot cake with cream cheese icing. Here’s the result recipe and the directions. It turned out OH SO GOOD and OH SO PRETTY!

Carrot Waffle Cake with Cream Cheese Icing:

Ingredients:

For the Carrot Cake:

thumbnail_IMG_3983.jpg
  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon ground nutmeg

  • 1/2 teaspoon salt

  • 3/4 cup or vegetable oil

  • 4 large eggs room temperature

  • 1 and 1/2 cups light brown sugar

  • 1/2 cup granulated sugar

  • 1/2 cup unsweetened applesauce

  • 1 teaspoon pure vanilla extract

  • 3 cups grated carrots, lightly packed

For the Cream Cheese Icing:

  • 1 (8-ounce) package brick style cream cheese, softened to room temperature

  • ½ cup unsalted butter, softened to room temperature

  • 2 cups powdered sugar

  • 1 teaspoon pure vanilla extract

Instructions:

For the Carrot Cake:

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until well combined. Set aside.

  • In a separate large mixing bowl, whisk together the oil, eggs, brown sugar, granulated sugar, applesauce, and vanilla extract until fully combined. Add the grated carrots into the wet ingredients and mix until well combined.

  • Pour the wet ingredients into the dry ingredients and mix with a whisk or rubber spatula until just combined, making sure not to over mix the batter.

  • Coat the two sides of a waffle iron with non-stick cooking spray, and heat. Working one-by-one, pour enough batter into your iron to make a waffle. Cook until done through but not overly browned. Transfer onto a wire rack to cool. Repeat until you have 4-5 waffles to stack.

For the Icing:

  • Place cream cheese in a medium bowl and using a hand or stand mixer, beat until smooth. Add the butter and mix until well combined. Add the vanilla extract and the powdered sugar a little at a time, until fully combined and creamy.

Assembly:

  • Choose your serving plate and place the first waffle in the center. Add a generous amount of icing to the top of the waffle and spread to the edges, place another waffle on top, and spread more icing on it. Repeat until you have the desired number of waffles, and height of cake.

  • Do not ice the top waffle - instead, place a dollop of icing in the center and garnish the stack with flowers (or whatever your creative spirit directs you to do) and sprinkle with powdered sugar!

It was recommended to us that the cake be allowed to absorb the moisture from the icing for at least 24 hours (or longer) before eating. This one was baked on a Friday, then garnished with edible Nasturtium blossoms, and enjoyed on Monday. It was DELICIOUS!!!

What flavor combinations might you try? I’m thinking banana or zucchini bread would also be good with the cream cheese icing, or maybe lemon cake with butter cream? Let me know if you try this and share your ideas of different flavors with me!

Incredibull STELLA | October Book Club

Buy Incredibull STELLA

Unconditional love is life-changing and life-saving. My book club pick for October, Incredibull STELLA, by Marika Meeks and Elizabeth Ridley, is the story of just such a love between a woman struggling to find her way back to joy and a rescue pup that will show her the path.

Marika Meeks, a busy, active entrepreneur, wife and mom, was struggling after recovering from extensive treatments to battle Stage 3 breast cancer, which involved a long extended stay from her family; husband Brian, and her two teenaged girls.

Although the treatments had been deemed a “success” and Marika was now cancer free, she felt as though the experience had robbed her of her vital essence. Fatigued physically and mentally, and feeling an emotional strain between her husband and children, Marika wondered if she’d ever be whole again!

Marika and Stella, all smiles!

Marika and Stella, all smiles!

Years before, Marika had wanted a dog, but she’d had three less than positive experiences. The pups she’d adopted and tried to embrace as family members had behavioral issues that neither her or her first husband were able to correct or live with. When she agreed to marry her second husband, Brian, one of his conditions was that they would not have dogs… so why were her thoughts returning over and over again to having a canine companion?

Would she have to convince Brian? Would her request put added stress on a marriage that had already endured so much throughout her diagnosis and treatment? As it turns out, not so much. Brian was committed to Marika and seeing her enthused about something - even pet adoption - made him want to support her.

There were a few rocky starts to finding the perfect companion. Marika fell in love a few times only to find out the mutts that had won her heart were not available for adoption, but then in walked “Shirley” a pup that had been abandoned along a dessert road-side. Upon first meeting, this little girl rolled over on her back and begged for a belly-rub. It was pretty much love at first site for Marika, and it wasn’t long before Shirley had won over Brian and the girls.

Shirley, of course, became Stella, and over her happy countenance, puppy high-jinx, and overall lovable character, this family re-bonded, and Marika regained meaning and purpose in her life.

I’ve always loved dogs and especially my rescue mutts that make the farm a furry and friendly place. Many a sad moment have I clutched and cried into a beloved’s fur and received nothing but pure, nonjudgemental love in return. I’m so glad Marika was able to find her spirit once again through Stella’s love.

This is a fantastic book and I think that any reader will become a fan of Stella, Marika, and their family, but I think you’ll especially love it if you’re a dog-nut like me!

I also have a nice big stack of Incredibull STELLA books to give away! Want one? Just send me a note, I’ll mail a copy to the first emails to hit my in-box until they’re gone!

"Autumn"

Screen Shot 2019-09-30 at 10.27.47 PM.png

I recently ran across this beautiful essay, published by the UK’s The Manchester Guardian Newspaper in the year 1840. It was written by a contributing editor identified only as “Alison.”

I found it to be overwhelmingly emotive and befitting of the meloncholic mood I’m now in, with the changing of the summer season into fall, and as I approach the anniversary of the date my son, Zachariah, changed his address to “heaven.”

For as many seasons as I have left on the earth before our heavenly reunion, autumn time will fill me with mixed feelings of such sadness in the missing of my boy and such joy knowing that he is in the arms of Our Father.

I wanted to share it with you all, in the hope that you might find some solace in Alison’s words, just as I have.

Autumn

There is an "even-tide" in the year - a season when the sun withdraws his propitious light - when the winds arise, and the leaves fall, and nature around us seems to sink into decay. It is said to be the season of melancholy; and if by this word be meant that it is the time of solemn and serious thought, it is undoubtedly the season of melancholy; yet it is a melancholy so soothing, so gentle in its approach, and so prophetic in its influence, that they who have known it feel, as if instinctively, that it is the doing of God, and that the heart of man is not thus finely touched but to fine issues.

It is a season which tends to wean us from the passions of the world. Every passion, however base or unworthy, is yet eloquent. It speaks to us of present enjoyment; it tells us of what men have done, and what men may do, and it supports us everywhere by the example of many around us. When we go out into the fields in the evening of the year, a different voice approaches us. We regard, even in spite of our selves, the still but steady advances of time.

A few days ago, and the summer of the year was grateful, and every element was filled with life, and the sun of heaven seemed to glory in his ascendant. He is now enfeebled in his power; the desert no more "blossoms like the rose;" the song of joy is no more heard among the branches; and the earth is strewed with that foliage which once bespoke the magnificence of summer. Whatever may be the passions which society has awakened, we pause amid this apparent desolation of nature. We sit down in the lodge "of the wayfaring man in the wilderness," and we feel that all we witness is the emblem of our own fate. Such, in a few years, will be our own condition. The blossoms of our spring, the pride of our summer, will fade into decay; and the pulse that now beats high, with virtuous or with vicious desire, will gradually sink, and then must stop for ever.

We rise from our meditations with hearts softened and subdued, and we return into life as into a shadowy scene, where we have “disquieted ourselves in vain.” Such is the first impression which the present scene of nature is fitted to make upon us. It is this first impression which intimidates the thoughtless and the gay; and indeed, if there were no other reflection that followed, I know not that it would be the business of wisdom to recommend such meditations. It is the consequences, however, of such precious thought which are chiefly valuable; and among these there are two which may well deserve our consideration.

It is the particular character of the melancholy which such seasons excite, that it is general. It is not an individual remonstrance; it is not the harsh language of human wisdom, which too often insults while it instructs us. When the winds of autumn sigh around us, their voice speaks not to us only, but to our kind; and the lesson they teach us is not that we alone decay, but that such also is the fate of all the generations of man. “They are the green leaves of the tree of the desert, which perish and are renewed.”

In such a sentiment there is a kind of sublimity mingled with its melancholy; our tears fall, but they fall not for ourselves; and, although the train of our thoughts may have begun with the selfishness of our own concerns, we feel that, by the ministry of some mysterious power, they end in awakening our concern for every being that lives. Yet a few years, and all that now bless, or all that now convulse humanity, will also have perished. The mightiest pageantry of life will pass, the loudest notes of triumph or of conquest will be silent in the grave; the wicked, wherever active, "will cease from troubling," and the weary, wherever suffering, "will be at rest."

Under an impression so profound, we feel our own hearts better. The cares, the animosities, the hatreds, which society may have engendered, sink unperceived from our bosoms. In the general desolation of nature, we feel the littleness of our own passions; we look forward to that kindred evening which time must bring to all; we anticipate the graves of those we hate, as of those we love. Every unkind passion falls with the leaves that fall around us; and we return slowly to our homes and to the society which surrounds us, with the wish only to enlighten or to bless them.

If there were no other effects of such appearances of nature upon our minds, they would still be valuable, - they would teach us humility, - and with it they would teach us charity. In the same hour in which they taught us our own fragility, they would teach us commiserations for the whole family of man. But there is a further sentiment which such scenes inspire, more valuable than all; and we know little the designs of Providence when we do not yield ourselves in such hours to the beneficent instincts of our imagination.

It is the unvarying character of nature, amid all its scenes, to lead us at last to its Author; and it is for this final end that all its varieties have such dominion upon our minds. We are led by the appearances of spring to see His bounty and we are lead by the splendours of summer to see His greatness. In the present hours we are led to a higher sentiment; and, what is most remarkable, the very circumstances of melancholy are those which guide us most securely to put our trust in Him.

We are witnessing the decay of the year; we go back in imagination, and find that such, in every generation, has been the fate of man; we look forward, and we see that to such ends all must come at last; we lift our desponding eyes in search of comfort, and we see above us One “who is ever the same, and to whose years there is not end.’ Amidst the vicissitudes of nature we discover that central Majesty, “in whom there is not variableness nor shadow of turning.” We feel that there is a God; and from the tempestuous sea of life we hail that polar star of nature, to which a sacred instinct had directed our eyes, and which burns with undecaying ray to lighten us among all the darkness of the deep.

From this great conviction there is another sentiment which succeeds. Nature, indeed, yearly perishes; but it is yearly renewed. Amid all it’s changes, the immortal spirit of Him that made it remains; and the same sun, which now marks with his receding ray the autumn of the year will again rise in his brightness and bring along with it the promise of he spring, and all the magnificence of summer.

Under such convictions, hope dawns upon the sadness of the heart. The melancholy of decay becomes the very herald of renewal; the magnificent circle of nature opens up our view. We anticipate the analogous resurrection of our being; we see beyond the grave a greater spring, and people it with those who have given you to that which is passed. With such final impressions, we submit ourselves gladly to the dusting of our being. While the sun of mortality sinks, we hail the rising Sun of Righteousness, and in hours when all the honours of nature are perishing around us, we prostrate ourselves in adoration before Him who “sitteth upon it’s throne.”

Let, then, the young go out, under the descending sun of the year, into the fields of nature. Their hearts are now ardent with hope - with the hopes of fame, of honour, or of happiness; and in the long perspective which is before them, their imagination creates a world where all may be enjoyed. Let the scene which they now may witness moderate, but not extinguish, their ambition. While they see the yearly desolation of nature, let them see it as the emblem of mortal hope; while they feel the disproportion between the powers they possess, and the time they are to be employed, let them carry their ambitious eye beyond the world; and while, in these sacred solitudes, a voice in their own bosom correspond to the voice of decaying nature, let them take that high decision which becomes those who feel themselves tho inhabitants of a greater world, and who look to a Being incapable of decay.
